Recipe: Fresh Blackberry Cobbler

Ingredients:

Filling
6 packages of blackberries (12 oz.)
1/4 cup tapioca
3/4 cup raw sugar (+ 1 tablespoon for sprinkling)
1/2 cup bourbon (optional)

Crust
 1 cup flour
1/2 cup shortening
1/4 cup ice-cold water
1/2 teaspoon baking powder
1/4 teaspoon salt

Directions: Preheat oven to 375F and then wash berries. Once the berries are dry, lay them out in a 9×13 pan. Sprinkle with tapioca and then sugar. Begin to prepare the crust by combining the flour, shortening, water, baking powder and salt. Mix well until doughy, but avoid overworking so that the dough keeps its elasticity. Pinch pieces off and drop them onto the berries. Continue until crust covers the fruit. Sprinkle with 1 tablespoon sugar and then place the cobbler into the oven.

Bake for 1.5 hours or until the cobbler is bubbling with a golden-brown crust.
